Portuguese Chicken and Rice

Ok, I have been wanting to post this for a few weeks now but things just got the best of me. This month I have been busy planning my husband and daughters birthday parties, School parties, constant cleaning you know how it rolls. So, with that said I now ready to get back to blogging and keep things on track here.

My husband is 100% Portuguese and my three kids are half so it is nice when I can make something from their culture. The food is always amazing! Also, check out Sandra's page! Her Portuguese section is under construction right now but trust me she's amazing and so is the food!

Ingredients

- 1 lb chicken thighs ( I usually always double up on recipes esp with meat! )
- 1 onion cut in quarters
- 1 bay leaf
- 1/2 a pound of bacon
- 1 1/2 cups of rice ( I used about 2C. )
- Salt and pepper to desired taste

Simple enough! :)

Chicken Rub Ingredients

- 4 TBSP softened butter
- 1- 1 1/2 Tsp of olive oil
- 1 Tsp Paprika
- 1 Tsp Garlic powder
- Pinch of salt

Directions

* Fill a Large pot halfway with water.

* Add the chicken, onion, bay leaf, bacon and some salt and pepper.





* Cook on medium heat until chicken is cooked.

* Remove the chicken, bay leaf,bacon and onion to a large bowl and set aside.



* Pour the rice into chicken broth and cook for 20 minutes or so until the rice is cooked.


* meanwhile, in a small bowl combine 4 TBSP of softened butter.

* Add the olive oil and paprika, garlic powder and a little bit of salt, mix well until smooth

* Spoon the rice into a 13 x 9 pan.


* Layer the chicken on top of rice with the bacon and onions from bowl.

* Take the chicken rub and spread it onto the chicken. (Try and use it all up!)

* Bake at 425 degrees F for about 30 minutes, or until bacon is nice and crispy and chicken is brown. For crispier bacon place under broiler for 5 minutes or so.



This is a great meal and not too hard to make. I love how the flavors all come together in this dish. I hope you enjoy this as much as my family does!
